Tomato and Mozzarella Pasta Al Forno

Ingredients:
2 tbs. extra virgin olive oil (i used regular olive oil)
2 garlic cloves, crushed (i used garlic powder)
2 cans diced tomatoes~italian
1 tsp. dried Oregano
Salt & Pepper
1 lb pasta of choice (i used bowtie noodles)
8 oz Mozzarella cheese, cubed
2/3 c. parmesan
4 boneless skinless chicken tenderloins
Directions:
Preheat oven to 400 degrees

(I used one can of diced tomatoes with basil and Oregano then one can of Rotel diced tomatoes mild)

Heat oil in skillet. Add your garlic cloves (if you used them) cook over medium high heat, 1 min. Add tomatoes and oregano and simmer rapidly, stirring until thickened, 15 min.

I actually added my tomatoes to my oil added my garlic powder and I used italian seasoning instead of Oregano. It gives it a better flavor.

Add your Salt and Pepper.

Meanwhild, cook your pasta and boil your chicken

Toss Pasta with sauce. Place half your pasta and sauce in the bottom of a 13x9 in. baking dish. Cover with half parmesan and half mozzarella. Then top with the rest of your pasta and add the rest of your parmesan and mozzarella to the top. Bake in the oven for around 15 min. or until cheese is melted to your liking.

Broil on high for about 10 min or less depending on how brown you want your cheese.
